Penja white Pepper Cream Sauce for Flat Iron Filet with Terre Exotique Fleur de Sel

Penja Black Pepper POIVN80AIngredients
4 6oz Filet Mignon steaks
Terre Exotique Fleur de Sel with grilling spices
2 tsp Terre Exotique Penja black peppercorns, coarsely crushed
2 Tbls olive oil
1 Tbls butter
1 Tbls flour
3/4 cup beef stock
3 tablespoons cognac
3/4 cup heavy cream
2 tsp Terre Exotique Penja white peppercorns, coarsely crushed
1 Tbls capers
Instructions
1. Preheat cast iron skillet
2. Season steaks with Fleur de Sel with grilling spices and Penja black pepper
3. Cook steaks to desired doneness
4. Remove from pan and let steaks rest
5. Add the butter to the pan and stir to get the bits off the bottom
6. Add the flour and stir to make a roux
7. Add the stock and stir to emulsify
8. Add the cognac and the heavy cream and stir until thickened
9. Add the peppercorns and the capers and immediately serve over the steaks
